Amarone della Valpolicella DOCG - Il Monte Caro
It is our little gem! For the Amarone we decided to bring together our original feel along with the most traditional technique of 'appassimento'. We value the three months of 'appassimento' very much. We do it by using also the natural winds that run through the Mount as the drying process needs to be slow and then by ageing this wine in stainless steel tanks so we don't cover the aromas of the grapes.
On the glass you'll find the typical complexity of an Amarone but the focus will be on freshness and balsamic aromas.
